Cajun Red Snapper
This is a great recipe! It was fast and easy to put together because all the spices are those you keep on hand. The fish was spicy and delicious, and I even omitted the salt completely. The fish was so flavorful, we didn't even notice! We are trying to eat less sodium, so that is a huge plus!

Black Bean, Corn and Turkey Chili
Fantastic! This is easy, satisfying, and quick to put together. I didn't have corn, so I used some left-over white rice and it became a one-dish meal. Using Rotel in place of the salsa and adding fresh cilantro (as other reviewers suggested)gave this a fresh and delicious flavor.

Spicy Honey Mustard Pork Roast
Let me start by saying that I completely lost my taste for pork almost a year ago. Until tonight. I thought this was fantastic. I cut back on the pepper, and used fresh ground. I also used 1/2 the honey, and suplimented with some deli mustard for a little extra "zing". The flavor of the glaze was amazing. A family hit and sure to be made again and again!!
