Hush Puppies I

I thought that by following the reviewers advice of adding more self-rising cornmeal and flour would insure that these hush puppies would turn out reasonably well. I even used a thermometer to bring the oil to 365 degrees to insure success with this recipe. I studied other hush puppy recipes and found this recipe lacked sugar which is a staple for hush puppies and added 1/2 cup. With all the improvements and advice I took, the careful watching of oil temperature, these were a big flop. The oil temp. of 365 is way to hot producing burnt outsides and mushy insides, the batter with the addition of 3/4 cup of additional flour and 3/4 cup of additional cornmeal still was not enough. If that wasn't enough, the taste was just plain. I can typically doctor up a iffy recipe with success but these were a waste of time, ingredients and just stunk up the house with that oily smell. I'm sad to give such a bad review when I had such high hopes of hush puppy success.

Flatlander Chili

Great chili recipe, I can't add anything to make the original recipe better it is just right for our palate. However, if you like really spicy chili, you might need to add additional cayenne, but apart from this-it's perfect!

Hearty Oatmeal Pancakes

I really got excited about a pancake recipe without added oil, so I wanted my kids to try this one. For starters, I had to make a substitution, the buttermilk-I did the old standby of adding a teaspoon of lemon juice for each cup of milk. Because I keep a container of blended oatmeal, I wasn't too worried about soaking the oats. These were the only changes I made to the original recipe before tasting them. It is a HUGE recipe and pretty easy to fix with ingredients normally on hand, (sans buttermilk) so that's a plus. They mixed up nicely and I supposed the cinnamon would be a flavor boost. I used Pam to spray my griddle with good success-no sticking. The pancakes when finished were cracked and dry on the outside. I attributed this to the lack of oil with the recipe. The texture inside was ok, but the taste was on the bland side. We couldn't even taste the cinnamon, so that measurement could easily be doubled. After my first 2 batches of pancakes were made, I added 3 TBSP. of vegetable oil for a more tender pancake. That was so much better! Then I added frozen blueberries to the pancakes and that made these AWESOME, and still kept with the hearty and healthy bent to them! The blueberries brought flavor to them and my kids and I liked these so much more after these 2 additions. So, a 5 star with the changes of blueberries or chopped apples, the oil and you have a great, hearty and healthy breakfast.

Overnight Caramel French Toast

This was really good, however I think it bears repeating to invert this after it's baked and plate it immediately. It hardens pretty quickly and sticks while it's warm, so don't let it sit. It tasted really great!

Fourth of July Ice Cream Cake

This was so good-light tasting, not too sugary and perfect for a summertime dessert. It was easy to fix but we had to do it in stages. this is definitely a keeper recipe for my house.

Cucumber Sandwiches III

AWESOME! My whole family enjoyed this. I will say that we took crusts off of regular white/wheat bread and flattened them with a rolling pin and cut them into fourths. This made a thinner bread layer and more petite bite sized sandwiches. I can see using fancy heart or flower cookie cutters to make these for a garden party or a tea party. Even my cucumber hating daughter and husband was pleasantly surprised by liking this sandwich. A keeper recipe for sure!

Cucumber Sandwich

My family really enjoyed this. The only reason I am dinging it a star is because the olive oil/red vinegar mixture was a little weird for us. I think regular vegetable oil and red wine vinegar would have been better. One daughter said this vinegar combo kept her from tasting the avocado, and to leave it off next time. I will definitely try this again, it is definitely worth repeating. Thanks for a great recipe.

Boardwalk Quality Maple Walnut Fudge

My kids and I made 3 different types of fudge over the holidays and this one was my favorite! Just looking at this recipe makes my mouth water-they were that good! They cut nice and evenly, and the maple flavor paired well with the walnuts. This will show up at the holidays and in between at my house for sure! Thanks for a keeper recipe!

World's Best Peanut Butter Fudge

I didn't know what to expect with the addition of flour to fudge, but these came out great. They cut nice and even and I think the flour was what thickened these to a perfect cutting consisitency. The taste was outstanding! We made 3 pans of fudge for the holidays and this was the favorite with husband and most of my kids. Definitely a keep recipe.

Jo's Rosemary Bread

I've already made this twice this last week. It's a great bread! I wouldn't change a thing about this recipe. I also found that it makes a great pizza crust as well-especially with alfredo cheese sauce. However, I doubled the recipe (used the dough setting on bread machine-not the pizza dough setting) and it made 3 med-large pizza crusts. Don't let this dough go into a setting that has a rising, (such as pizza dough or rolls) or it will overflow from your bread pan. Only use the dough setting for pizza crust and let it rise in a large bowl afterwards and then shape your pizza crusts. This is a definite keeper of a recipe!

Roasted Red Pepper Cream Sauce

Oh my good Lord in Heaven-please let this sauce adorn the pasta at the banquet table when I get there!!!! Out of this world good, and not that difficult to make. It would work well with any kind of pasta and I could see this sauce and pasta paired up well with grilled chicken strips. My mind reels with the possibilities of how much I can use this. THANK you Bob! It should be noted that all the low reviews changed this recipe from using jarred peppers, dried basil, to subbing lowfat milks and adding onions, broth and the like. Perhaps rating the recipe on how it is written would be helpful to those who are considering making it-then reviews could be taken at face value. :-)

Honey Peanut Granola

Cinnamon Cream Syrup

This was awesome! I followed ingredient list-only I microwaved instead of heating in a saucepan. The results were still 5 star, and a nice thick syrup. My family loved this. Thank you for a keeper recipe!

Cherry Crunch

THIS is the recipe I have been looking for since my childhood! I learned this while I was young and it is still a winner recipe. Delicious should not be this easy but I love it when this happens as I'm such a busy mom. As stated by many, it's a versatile recipe changing out your canned pie fillings, and adding extra's such as cinnamon to apple pie filling, almond flavoring to cherry pie filling, lemon extract to blueberry pie filling, etc. It's simple, fast, delicious and my kind of recipe for busy nights.

Kooky Cut-Outs Treats™

We used both cookie cutters and a mold and both turned out great-just spray the mold well. We used frosting on the molded one (it was a turtle) and we used melted chocolate on star cookie cut out shapes that we dipped the star tips in the melted chocolate. It's a nice way to dress up a no bake treat with little effort and the kids had fun doing it.

Chocolate Coffee Toffee Chex® Mix

Half of my family is coffee drinkers and we all loved this-the other half, who didn't care for coffee....wouldn't eat it. It's a great recipe but the coffee taste is strong and very present so you have to know who you're serving with this recipe. It's like a mocha in a crunchy snack form.
