Honey-Glazed Chinese Chicken
Super tasty! Making it tonight for the 2nd time in two weeks. Didn't have drumsticks on hand, so I'm using chicken tenderloins...other than cooking time, I'm sure it will make no difference. First time, went strictly per the recipe (I believe you should always do that!). This time, just to see, I added a pinch of red pepper flakes, 1/4 tsp garlic powder, and a few grinds off the pepper mill. Oh, and I don't have any green onions either, so I added one tsp of dried chives to get that hint of onion flavor. We'll see...will let you know!!

Yellow Squash Casserole
Really good!! We had 2 adults and 8 teenagers over tonight for a birthday dinner (I almost doubled the recipe). Two of the teenagers had never had any type of squash before...and, can I just say... everyone tried this and EVERY plate was clean; most went back for seconds; and nearly all of this dish was gone!!! Didn't change anything and I WILL be making this again. YUMMY!!!!

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo
These were amazing! My family absolutely loved these tacos and asked if I can make them regularly. I always make recipes to order the first time around, but with this recipe I didn't put in as much chipotle peppers only because I tasted it after I put in about half of what it called for and the flavor and heat were perfect for my family. Plus, I didn't realize until I was prepping the fish that I forgot to put the cayenne pepper in with the mayo, so I put a dash or two into the flour as I was breading the fish. So, no major changes...and, it was perfect!!!! This will be served often from now on!
