Maple Dill Carrots
My family and I don't like cooked carrots very much, but I thought I would try these since I was tired of other vegetables. My husband wanted seconds, my son ate them and I thought they were the best cooked carrots I ever had.

Light Chicken Piccata
I tried this recipe because I had bought some plain whole milk yogurt by mistake, and wanted to use it up. I did let the chicken sit with the yogurt overnight and the chicken came out wonderfully tender - my husband loved it. I made a few small changes. I did not have capers, so I added some fresh sliced mushrooms to the sauce just before putting the cooked chicken back into the pan. I also sprinkled the top of the chicken with some freshly chopped chives to add a little color. I used Pinot Grigio white wine since that was all I had on hand. I will definitely be making this again!

Baked Potato Salad I
This was a great potato-cheese casserole. I changed the servings to 3, only using two potatoes. After cooking the bacon, I added the chopped onions to the bacon fat and sauteed them; afterwards draining well on a paper towel. I used half mayonnaise and half sour cream, only needing about 1 Tablespoon of each for this smaller portion. I did not use olives, but cut some fresh chives and added them to the top of the dish before cooking. It only took about 20 minutes at 350 degrees to become light brown and bubbly; the taste was wonderful and it was plenty for two or three people.
