Chicken Satay with Homemade Peanut Sauce

substituted chili oil for fish sauce (didn't want to buy a whole bottle for 1 recipe), tasted just like the one I get in my favorite restaurant!

Baked French Fries I

Yum! I made these fries 2x this week. The 450 oven temp worked well for me (it really depends on how accurate your oven is). I used 1 tbsp oil for and 1 tbsp grill seasoning and they came out great! I flipped them halway through baking and even put them under the broiler for about 1 minute to get them extra crispy. I can't imagine ever buying the frozen kind again!

Sugar Cookie Cutouts

I have never had so much success with a sugar cookie recipe! I rolled out the cookies to about 1/4 inch, but even those that were rolled out a bit thinner didn't break. They were very easy to decorate and were gobbled up at a 4 year old's birthday party. The cookies didn't even break after being handled by a bunch of pre-schoolers! I added 1/4 tsp of salt and a little extra vanilla as suggested by others. This isn't a very sweet cookie, so it can easily handle the sweetness of the frosting. I was able to make 30 cookies that were 3 inches by 2 inches.

Boston Baked Beans

Definitely a keeper- I used all of the same ingredients listed in the original recipe, but I wanted to make mine in the crockpot. I soaked my beans for 8 hours, then simmered my beans for 1 hour. I layered the beans, onions and bacon in my crockpot, then added a double batch of the sauce. I added enough water to cover and set on low for 10 hours. I like my beans thick, so for 2 hours I left the lid off and the sauce thickened very nicely. I had many requests for this recipe. I can't wait to make it again for Memorial Day.

Black-Eyed Pea and Bacon Soup

My southern husband and I thought the recipe was too bland. We served it with cornbread as others suggested- maybe I will try it again and add more seasonings and a bolder flavored bacon, like the pepper crusted many have used.

Awesome Slow Cooker Pot Roast

Yum! I used a 3 pound roast and put it on low for 10 hours- instead of adding veggies to the pot roast as others did, I roasted baby carrots with butter and parsley and served it all over mashed potatoes.

Best Peanut Butter Cookies Ever

This recipe is OK if you are looking for something super-easy. My prep/bake time was only 10 minutes, so that is a plus. The cookies were better than store-bought but I prefer a peanut butter cookie made with a traditional recipe.

Sweet and Sour Chicken III

This definitely tasted better than take-out! I agreed with other reviewers and added more pineapple- a 15oz can and doubled the sauce. I think next time I will add less soy sauce, it was a tad too salty. I found this recipe is a great way to stretch a small bit of meat- I only used 1 large chicken breast cut into 1 inch pieces and I served it all over brown rice.

Baked Asparagus with Balsamic Butter Sauce

I love asparagus but my husband hates it. I made this recipe and he was floored- he even asked for seconds. I cut then peeled the base of the asparagus with a veggie peeler to make it more tender. I also added a bit of parmesan cheese. I will definitely make this again.

Irish Cream Bundt Cake

I served this on Mother's Day to rave reviews. It was very simple to make. I followed another reviewer's suggestion and placed the glaze in the bundt pan after the cake had cooled on the rack. I placed the cake back in the pan for a bit too long and it stuck! I just placed the pan back in the oven at 175 for 10 minutes and the glaze loosened up and the cake came out.

Creme Brulee French Toast

Sauteed Corn on the Cob With Chili-Lime-Cilantro Spread

I love corn on the cob, but I like to spice things up a bit and this recipe was great! I boiled my corn, then made the sauce (using 2 tbs. butter instead of sour cream) and then added the corn to the saucepan with the cilantro mixture. *Delicious*

Artichoke Chicken

I'll definitely make this recipe again, I just tweaked a few things to suit my tastes. I would definitely recommend marinated artichokes instead of plain canned ones. When I just used canned ones I added 2 tsp. dried dill. Also, spend the extra $1 and get the higher quality artichokes (instead of storebrand), otherwise you may get a few tough choke tips. I drained the artichokes to solve the water problem and to make it a little more heart friendly I used 1/4 cup light mayo and 1/4 light yogurt. I love artichoke dip and now I love artichoke chicken!

Lemon Green Beans with Walnuts

This dish tasted pretty good with a nice bright flavor. The only problem was the amount of butter- I didn't think it needed that much since I don't like my food drowning in butter. I just added one tbs. butter and I thought it was plenty. This recipe is definitely a keeper!

Bella's Rosemary Red Potatoes

This was a good recipe- but it inlcuded a bit too much butter for me. I included 1 tablespoon of butter and lightly sprayed the potatoes with a butter flavored cooking spray. A variation that turned out well= substitue fresh dill for the rosemary.

Irresistible Pecan Pie

I have to say I cheated on this recipe and used a store bought crust- but it still came out great! Not a crumb was left over in the pie plate at the end of my Thanksgiving dinner. A great way to finish off a holiday or everyday meal!

Honey Glazed Ham

I'm not the biggest ham fan- but it was great! It was a big holiday hit with my whole family. I added the juice from a can of pineapple rings to the sauce and then for the last 10 minutes of baking I garnished the ham with the pineapple rings. Beautiful and tasty!!
