White Bean Chicken Chili
I love this recipe. It is a great way to use leftover rotisserie chicken. You really can't go wrong once you put in the seasonings. I have added leftover salsa, extra chicken stock (I use homemade) salsa verde, fresh tomatillos, you name it, I have varied it and it is always scrumptious! I like it as a soupy consistancy and serve it with crushed corn chips or fried strips of corn tortillas. This is a winner

Goat Cheese Stuffed Tomatoes
This was wonderful! I Served them on a bed of field greens drizzled with olive oil and balsamic vinegar. Pretty presentation and very very easy and fast. (Wait until they are done cooking before you add the basil.)

Breaded Parmesan Chicken
very, very good. I did not have any stuffing mix, so I substituted panko bread crumbs and some extra seasonings including a bit of chicken bouillon. I served it with rice and salad and it was a big hit. The piece I have left over will be wonderful sliced and put on top of a salad.
