Beef or Chicken Enchiladas
This was liked by all. I didn't have any green chilies on hand so I just chopped up some green pepper to add colour. The kids probably preferred that anyways.

Gobi Aloo (Indian Style Cauliflower with Potatoes)
The potatoes made a mess of my pan, but the dish turned out great. I think the leftovers were even better!

Cucumber Peanut Salad
