Onion Bulgur Salad
Very fresh tasting! I didn't use mint because I didn't have any. I added 1/4 cup of chopped fresh cilantro to the mix, which was a great addition. I wanted another grain so I added about 1/2 cup cooked green lentils, which gave it an additional chewy bit of texture. I didn't use all of the bulgur (will add some fruit to it and have for breakfast tommorow). I will make this again, or at least some variation of it. Thanks
