Azteca Soup
I used some canned substitutes and it was still great...drained diced tomatoes instead of fresh and canned diced chilles instead of adobo. I also added canned black beans and corn a couple times for a heartier soup. Always topped with monterey jack cheese and tortilla strips (or chips). Always enjoyed to the last drop!

Chicken Tortilla Soup I
Very good recipe. I was trying to make something like the Aztec soup from the Mexican restaurant that my boyfriend LOVES for Valentines. He said he liked this one better because I didn't cheap out on the good stuff! The only real change I made was that I used a can of drained diced tomatoes instead of crushed and extra broth because I wanted it more like chicken broth rather than a tomato-based soup

Raspberry Lemon Muffins
Delicious. I used a cup of fat-free strawberry yogurt, juice and zest of a whole lemon, vanilla instead of lemon extract, mixed whole wheat and white flour, almost 2 cups of frozen raspberries, added ground flax, and reduced sugar slightly. In an attempt to make a not unhealthy recipe healthier the slight changes I made still made for a great muffin. Next time I will use greased muffin tins as a good portion of the muffin stays attatched to the paper cup.
