Grandmas Fresh Apple Cake
WOW!!! I did not think I could find a cake I liked better than the applesauce cake I got from this site and have been making for years but this is amazing. I have made it as is, I've doubled it for a 9X13 pan and I've made it with all whole wheat flour. My sister says this is her new favorite apple dessert, pushing apple crisp to the side after 40+ years. That is saying something. I made it three times in one week. The raisins on top burn a little so I tried soaking them but found it made the cake too moist so I will stick with not soaking the raisins and dealing with the burned. It made a nice crunchy top when I didn't soak. Also, the "batter" is more like fruitcake or a pressed cookie dough. It is very thick but it bakes up beautifully.

Cranberry Crumb Bars
We have been making this for years, since it first appeared in Taste of Home and and it is always a big hit. I've had to copy and send it to people dozens of times. I don't change a thing.

Okra, Chicken and Rice Casserole
I don't like okra so I couldn't give it a higher rating but it isn't a bad recipe. Okra is very common/popular in Japan where we live so thought I would give it another chance and this looked promising. I sauteed the frozen okra with garlic before mixing the rest of the ingredients just because I love garlic. I also left out the chicken since I'm a vegetarian. I thought it was yummy but okra is okra. My kids really hated the okra. It was quite filling and comforting and I would make it again with another vegetable. Maybe carrots or broccoli but I would put the broccoli in in the last 20 minutes or so and would probably use frozen broccoli.
