I've made this twice now w\ the Silken tofu & a regular pastry crust instead of the graham one. It does not last long at our home! I tried to make it completely vegan by not adding the whipped cream...however it just seems to need the the topping to give it a better layer of flavor. So, now trying to find a good recipe for TRUE non-dairy whipped topping. This is a neat recipe that can be modified in various ways to make it more interesting. I will definitely keep making this one.

Baked Kale Chips

Tried it once per the original recipe. Now I make these all the time with some changes. I don't use parchment, lower the over to 280, spray them with plain or butter flavored cooking spray, then (and most importantly) grind cashews in a coffee grinder mixed with nutritional yeast, I then generously sprinkle it over the kale. Have also tried it w\ just the yeast which was good also.

Cod with Italian Crumb Topping

Mine turned out ok, follwed the recipe but used Tilapia instead since cod was $9.99 a pound when I went to the store. I think it just needed a little something else, will make again but add more spice and salt.

Lemon Sauce for Salmon Patties

Francisco's Blender Salsa

Good base but was a little bit bland; added chopped onion, cumin, garlic powder, salt, white pepper and lemon juice to taste. (It's easy to add too much cumin so go lightly with it. )

Blackened Salmon Fillets

Chicken Tortilla Soup II

Was perfect! Very flavorful and easy too. My Boyfriend thought it was from a restaurant. I topped it w/ jack cheese, & avacado, and fried up my own tortilla strips. It's very thick so you may want to add more chicken broth.

Crab Bisque

Really easy, mine turned out very bland.I ended up adding whatever spices I could find in my cabinet to spice it up. Also, the imitation crabmeat fell apart in the soup. which made the crab seem sort of like noodles. (You know how imiatation crabmeat can unravel.)I recommend useing canned crabmeat instead.

Restaurant-Style Cheesy Poblano Pepper Soup

Need to make sure to make the tortillas really fine. Mine turned out too thick, I also added more poblanos because it did not have enough flavor. I topped w/ some avocado, cilantro, lime, & black olives which seemed to help. It was actually better the second day.
