Black Bean and Couscous Salad

I have been using this one for several years now, and it is still a favorite. I do add a little more of the dressing. I have made this using bulghur and quinoa as well.

One Bowl Chocolate Cake III

When I first made this cake my family loved it, but it seemed way too oily for me. However, like a previous reviewer mentioned if you let it sit a day or two it gets much better. This is a great cake if you are looking for something easy and fast to make, but I recommend it more if you can let it sit a day. Makes really good cupcakes too.

Buttercream Icing

This is a good basic buttercream recipe. I typically use all butter to frost my cake, then use half butter and half shortening for my piping. It is important to use room temp butter. If you heat it in the microwave it may get too warm and your icing could seperate. You can whip for only 5, but if you whip for at least 10 minutes you will get a better texture.

Simple Scones

Wonderful recipe, and so easy! I made one batch with poppyseeds and lemon, and another with dried cherries and dark chocolate chunks. My kids think I am the best baker ever, and I put these in a basket with some homemade biscotti and banana bread for a charity auction at my husbands work. They got rave reviews!

Blue Cranberry Sauce

Love this! I always make mine fresh, but wanted to cut back on the sugar, this worked perfectly. I used half water, half orange juice, added orange zest, and left out the spices. I like mine tart, so it was perfect for me. Great on ice cream too! Only bad thing is that it is totally addictive.

Cranberry Sauce I

I make this every year and my family loves it. The only change I usually make is to add orange zest. I may try doing half brown sugar at xmas and maybe nuts too! Great basic recipe.

Roasted Beets and Sauteed Beet Greens

When I was a kid my family always had pickled, canned beets and I hated them!Now at 35 I decided to give them a try in a grown-up version! I love these! Coudn't get beets with greens at the store I was at, but the roasted beets are fabulous!

Peanut Butter Haystacks

We always made these when I was a kid, just never with peanuts. It's amazing how something so simple could taste so good. Great starter recipe to get your kids having fun in the kitchen!

Bread Pudding II

So easy and delicious! I used Sarah Lee's low cal bread and used 7 slices. I think 8 would be better as it was a little wet for me (they are small slices). I used light soy milk, and omega-3 eggs, changed the raisins to fresh blackberries. I also used 1/2 splenda, and you couldn't even tell, so I may use all splenda next time. For those counting calories, it came out to 105 per serving at 12 servings. I am quite sure this is equally delicious as written, but part of the reason I rate it so high, is that it is so easily changed to suit different tastes and diet needs.

Apple Zucchini Bread

Yum! Made with half whole wheat flour, 1/2 splenda in the sugar, added shredded carrots, golden raisins and fresh chopped pineapple. I only used 2 tbsp of oil and added yogurt and applesauce for moistness. They came out great, thank you! Can't wait to try it with different fruit variations, and I think I will try skipping the oil all together.

Fruit Cobbler

This is such an easy recipe! My family loves it, and it's perfect to take to barbecues. I am a pie crust lover myself, but my family likes this cakey version. With the sweet batter you don't have to use much sugar for the fruit. Thanks for the great recipe!

Good Old Fashioned Pancakes

This is such a great basic pancake recipe! My family loves it, and I make them at least twice a week. No more bisquick for us! I did take the advice of other users and added another tablespoon of sugar and a tsp of vanilla.
