About this Cook
I like to cook things that people really enjoy. My mom definitely influenced how I cook & how I see food. My family spent two years in Europe and both of us had to learn how to cook in a whole new environment. We were given a cookbook titled "More With Less," published by the Mennonites. Since I couldn't read labels or mixes, this taught me how to cook everything from scratch. Now that I live in the US again I am really enjoying having so many mixes available to cut down on cooking time.
My favorite things to cook
I love all desserts!! Especially things with an unusual ingredient. I think beverages could play a much bigger role at parties (we rely so much on soda pop!) so I've really enjoyed all the great beverage, punch, juice recipes here - especially ICED MOCHAS!! Bravo!

Gina's Lemon Pepper Chicken
Worth doing again! I'll pre-brown it next time. I was too liberal with the spices and it was too peppery for my kids. Easy, quick, went well with white rice & steamed broccoli.

Cranberry Muffins
Looks more like a scone but bakes like a muffin! Awesome!

Impossible French Apple Pie
I took some liberties with this: added maybe 1c. cranberries, the apples were already seasoned from another apple pie and I used a stoneware pie plate. It took nearly 2 hours at 350. Finally I shut the oven off with the pie inside and went to do my hair - came back and it was finally done. Hopefully it eats as good as it looks - which is pretty awesome.
