I loved this recipe. My fam thought it was a bit salty, so I'll cut back on that. Also need to watch that it doesn't burn or it looses appeal with the kids. Also seemed like I used more oil than it called for.

Roasted Brussels Sprouts

Six stars. I use frozen, and I crave this at times and can eat almost a whole bag for dinner with nothing else. If you sort of like brussels sprouts, you will love them this way.

Eggplant Supper Soup

My husband normally has not much to say, but he liked this one a lot. I loved it. A keeper for sure. I changed it to turkey and had one can of beef broth and one of turkey. Used small noodles (the little tiny tube kind) and it was great. Thanks for the great recipe!

Apricot Lentil Soup

Loved it. Husband did not like the apricots whole, but passed them my way, and agreed they added a unique flavor to the soup. Also used regular lentils as red was not available and it was great. Also, used a can of whole tomatoes and a handful of fresh grape tomatos and it was really good.

Angel Hair with Feta and Sun-Dried Tomatoes

Excellent - made it with a bit of red pepper flakes and oregano and parsley instead of cilantro. Added a bit of lemon juice too. Served with steamed spinach and it was excellent.

Greek-Style Stuffed Peppers

A hit! I left the raisins out and added a bit more feta. I also used lean ground beef instead of pork, and I stuffed some tomatoes too - which were almost better than the peppers. This is a keeper for sure! Thanks for sharing!

Dill Sauce

Excellent - used dry dill, dried mustard and low fat sour cream. Careful when making because if you taste it when you make it, it doesn't taste like much. Once its chilled a while the flavors really come out.

Salmon Cakes II

Excellent. Baked them at 375 for 20 mins and then browned them in a pan. Used fresh leftover smoked salmon and used 2 eggs instead of one. Thanks for the recipe!
