Amazing Simple Thai Tofu
This recipe is delicious! I love finding new ways to cook tofu and this flavor combination was a pleasant surprise. I served it over brown rice and it tasted very good. I did make the mistake of buying the ingredients without noticing that it only serves 2!! There are 6 of us but it still worked out because 3 of my children would not eat it (note to parents!). I plan on making this again, hopefully my kids will be a little braver next time! Thanks for the great recipe.

Crispy Chinese Noodles with Eggplant and Peanuts
This dish is absolutely delicious!! I wasn't sure when I saw the combination of ingredients but in my search for great tasting vegetarian recipes I gave it a shot and I am so glad I did! The end result is wonderful. I will say that it is not very kid friendly as 3 of my 4 children wouldn't touch it but my husband and I loved it so it will be a staple in my house from now on. Serving it with the crispy noodles on top makes for a nice presentation so it would be a really nice meal to make for company. Thank you for the excellent recipe!!

White Chocolate Covered Pretzels
These are VERY yummy!! Do know that even though it says to use a 15 oz. bag of pretzels, this amount of chocolate will cover probably only 1/5 of them. I melted the chocolate along with 1 Tbsp. of shortening in the microwave for 1 minute and then stirred until smooth. The shortening keeps the chocolate smooth and it won't stick to the bowl. Then I sprinkled them with crushed candy cane and drizzled a little semi-sweet chocolate over the top. Not only are they delicious but they look beautiful! Next time I'll double the amount of chocolate so I can make more pretzels. :)
