Sophie's Zucchini Bread
Wonderful bread! First time around I substituted the applesauce for the oil. It was very good, but a little on the sweet side. Second time around, I packed down the zuccini so it was a solid 3 cups, added 1 tsp of nutmeg, added 1 cup chocolate chips, and actually poured the whole batter into a 9x11 baking pan and baked for about 25-30 minutes and made Zuccini "Bars". I brought it to a pickies / dessert party and it was great!
