Delicious Ham and Potato Soup

Excellent and SOOOO easy! I added carrots and peas for veggies and color and also added cheddar to the milk mixture - I don't think I'd skip that change. No need for extra salt, definitely needs pepper though.

Slow Cooker Pulled Pork

This was the BEST pulled pork I have EVER had!!! I sprayed the pot with pam first - works wonders! Use a 4.5lb pork butt(shoulder), Foxon root beer, and Bulls-eye bbq sauce. Pork cooked on low for 7 hours, bone fell out while I carried to the cutting board!

Cuban Ropa Vieja

Bell pepper makes it taste too italian, I would use a different type of pepper. Otherwise it was good. I just added an extra garlic clove and a little salt and red pepper.

This NEVER set! I've got in in the oven right now to see if I can recover. Another recipe says to bake it at 300 for 25-30 minutes... hope it works!

Sweet and Sour Meatballs I

VERY easy. I made it while at a conference in a hotel. mixed it right in the crock pot 6 hours before the room party. I used one bottle of ketchup, one of chile paste and half a bottle of jelly for my back of 140 meatballs. I used the italian style cuz that's all they had, but plain would be better.

Hot Spinach Dip

This got LOTS of compliments. A doubled recipe went in 20 minutes. Only change was adding fresh garlic and baking it. Second time, I tripled it, using the garlic and baking, but forgot the 3rd amount of mozz. I had a 1/2 cup of feta in the fridge and threw that in instead - Even BETTER! It was enough to bake in a 9x13 glass pan.

Raspberry Vinaigrette

I didn't have chicken broth, and I used red wine vinegar. I think a little less sugar next time - mine were just picked, so probably already sweet by them selves, otherwise it was still delish! Put on baby spinach, with cuke, feta and bacon bits - would've put candied walnuts if I had them :)

easy and a huge hit at work. Used milk and semi-sweet chips, butterscotch would be WAY to sweet. Use the full 14oz can of milk too.

I also used the cream of mushroom, and I added some frozen mixed veggies(carrots/peas/corn) and some worstershire and fresh garlic too. With these simple changes it's a 5 star!

Easy Batter Fruit Cobbler

I didn't think it was anything special, but it was VERY easy and everyone else absolutely LOVED it. I did forget to add the sugar on top... and then forgot to serve it(lol), so it wasn't warm. Warm crusty might've made the difference. Yummy easy way to use fresh blueberries.

Chicken Cordon Bleu I

This was so easy and delish! I think it's all about the kind of cheese and ham you use. I used an imported danish ham, not too salty, and provalone. I also dipped the rolled chicken in butter, then breadcrumbs. the breading seemed a little wet, maybe if I sprayed with butter to get a crispier result. I would also use unsalted butter next time too.

Chicken Pot Pie IX

The BEST recipe I think I've tried so far (after the blueberry muffin recipe lol). Only only made a couple changes according to other reviews. -Added garlic with onion to saute. -Boiled the chicken and veggies in broth (not water). -added some rosemary and thyme to the gravy before mixing the veggies in. I thought it was wonderful. My boyfriend suggested like others that it was dry and could use more of the gravy mix. More filling overall might be good too, it JUST filled the pie - nice and level. maybe an extra half of the gravy mixture.

This would be 4.5 if I could. It was moist and yummy, but the pineapple taste wasn't really there. Maybe fresh pineapple would make the difference.

Old Fashioned Coconut Cream Pie

I used a couple review tips, used a can of coconut milk withthe half&half to equal 3 cups, I replaced the 1/2c flour with 1/3c cornstarch. Just make sure you cook it to thickness. I got nervous when I saw clumps, but I think it would have been less messy if I kept going. I only toasted the 1/4 c of flakes for the top and I also used a shortbread crumb pie shell. Tons of compliments - delish and TASTES lite :)

Yummy Eggnog Pie

This was a huge hit! I took others' advice and froze them overnight, helped with the travel time to work too. Also used a pre-made graham cracker crust(toasted per package instructions). It was a bit sweet, but hey, it's the holidays! Also used the tub cool whip because I didn't buy enough heavy cream. That might be why it was so sweet.

Thighs on Rice

I think 2 bouillon cubes was too much, and as others said, it took much longer than 45 minutes. The water didn't even boil by 35, but the chicken looked ready. I left it it maybe a total of 50 to 60 minutes, and some of the rice was still hard, fortunately, the chicken remained moist. The only stray I made was to add one minced garlic clove.

Cookies 'n Cream Cake

This was very tastey, even for an all adult crowd. Everyone asked which bakery I got it at. I did think the frosting would be to thick to frost, so I added a dash of milk and I think that is what made it smooth enough to practically "pour" it on the the top and slide it around to frost the sides. I then feared it was to liquidy, but it frosted nicely and I QUICKLY put it in the fridge. It set perfectly. I added crumbled cookie crums on top and a ring of whole oreos on top before chilling. I thought the frosting was too sweet, even though everyone loved it, they agreed. Next time, I think a sheet cake with whip frosting next time.
