Pumpkin Pancakes
These were SO tasty.Totally enjoyed!! Being a busy Mom, I changed a little to suit the timing I have in the morning. I started with the Complete Pancake Mix (made recipe for 12-14 pancakes). Before adding the water, I blended the Allspice, Ginger, & Cinnamon with the Pancake Mix. Then I added the water, then pumpkin...mixed well. Don't get me wrong, baking from scratch is the BEST. Thanks, Ruth, for the WONDERFUL recipe :o)

Chicken and Rice Soup II
This was really good. The whole family enjoyed it. Reading all the problems w/the rice turning the soup to mush, I came up with this solution. I made the soup according to the directions (adding a little more spices to my liking) and instead of adding the rice to the soup to cook, I made the rice first (I used instant rice) and then the last 30 minutes or so, just added the rice to the soup. Came out more like soup, not mush. Hope this helps anyone else. Thanks for the recipe Corwyn. This one is a keeper.

Cream of Pumpkin Soup
This was a VERY pleasant soup to eat, especially with the croutons. Definitely will make this again and again. I did do one little tweak to it...I didn't have heavy cream, instead I used half & half (fat free, too!) Still came out real creamy. Thanks for the recipe!
