About this Cook
Now that I'm in graduate school and am an empty nester, my kitchen doesn't get as much use but I still enjoy being creative. This site has given me the recputation of being a good cook. Thanks everyone! Raised and living in So.Cal all my life, I love the warm summer months when the barbeque gets lots of use. My husband and I have 5 children, ages 23 to 28 (a set of twins is in there too!), three grandchildren and when I graduate I will definitely get back on track with cooking. My husband has taken over more of that as of recently and does a darn good job of keeping us in good food.
My favorite things to cook
I enjoy cooking family traditions. I love homemade soups and stews in the winter and salads in summer. Using herbs I have started growing in my garden works for me too. I enjoy eating healthy and have even tried Tofu Parmisan! from this site and it was really good.
My favorite family cooking traditions
There's always a good Irish stew or cornbeef on St. Patty's Day, Norweigan Pancakes on Christmas morning, German Pork ribs with Sauerkraut and of course living in Southern California I grew up with a wonderful Mexican Stew my Irish mother would make along with tacos and Tortilla Soup that are always family favorites in our house.
My cooking tragedies
I can say I've joined the club that has cooked the turkey gizzards inside the bird on Thanksgiving Day.

Cheryl's Spinach Cheesy Pasta Casserole
This was great! Brought it to a potluck at work and it went over big. I brought the dish home empty. I used fresh spinach and sauteed it first in a little olive oil and fresh garlic. I will definitely make again. This is a keeper.

Tofu Parmigiana
Really good! Probably my favorite way to eat Tofu. Very similar to the Tofu Cacciatore the South Beach Diet - Phase 1 makes available but without the bread crumbs of course. The family won't eat it but it's great for my over-50 new habits I'm working on and makes a great leftover to take to work.

Easter Breakfast Casserole
Great breakfast casserole! I bring it to our family Easter potluck brunch and it's always a hit. Sometimes I'll add mushrooms(sauteed 1st) or chopped tomatoes and just this morning I used the leftover tater tots from last nights dinner instead of hashbrowns. although when making for holidays, I prefer the hashbrowns. I warmed them in the microwave for about three minutes to take the chill off. It's much less time consuming to make the night before as well and it's ready to pop in the oven first thing in the morning. We always have salsa on the table to go with it. I've made this often.
