Spicy African Yam Soup

Yum! I made this soup for dinner tonight, and it was delicious. I did make a few changes, I used vegetable bouillon instead of chicken broth, added a few red pepper flakes and increased the amount of thyme, garlic, cumin and peanut butter. The flavor is great as is, I just wanted my soup to be a little more intense.

Vegan Mac and No Cheese

This recipe is pretty good, and I will make it again with a few changes. I will reduce the lemon juice a little bit because it is a bit strong for my liking, and I will add a little extra garlic powder (or maybe a little adobo).

Green Velvet Soup

Delicious! I really liked this vegan soup. The recipe is pretty forgiving (I used vegetable bouillon, not broth, only had one potato and used frozen broccoli and spinach). I added a handful of frozen peas (because I had them). For me, the flavor was good, but needed a little enhancement, so I added garlic a little adobo and increased the basil and pepper. Still, I think the recipe was great and will make this again!

This is a good recipe, but I wanted a little more zip so I upped the garlic and cumin a little. The flavors are great together as is, it is just a matter of personal preference.

Awesomely Easy Sesame Asparagus

I spent my childhood disliking asparagus and only started enjoying it recently. I used this recipe for my first attempt at asparagus, and it was great! The only change I made was to add chopped garlic and a few shakes of adobo to the oil.

Chocolate Oil Cake

Yay for a yummy VEGAN desert! I added a handful of chocolate chips and cooked it in a bundt pan (50 minutes). It stuck, but tastes great. Next time I will try to use half applesauce and half oil.

Zucchini Brownies

I thought that these were only so-so. Granted, I made a few changes (mostly b/c my pantry wasn't as well stocked as I had thought prior to my bought of insomnia!). I threw in a handful of chocolate chips instead of the walnuts, used a combo of oil and apple sauce as well as a combo of Splenda and sugar. My problem with the recipe is that it wasn't chocolatey enough for me. I wanted a little more umph in the flavor department. Perhaps I should have made the frosting. Maybe I will do that when I get home from work and update my rating.

Nauvoo Gingerbread Cookies

I made these cookies for Christmas and they went over very well. I did make some changes (canola oil instead of lard, more ginger as well as the addition of ground clove, nutmeg, allspice and vanilla extract), but the recipe was a great starting point.

Chocolate Chip Pumpkin Bread

This is fantastic! I made a few alterations to the recipe... I don't like chocolate chips in bread, so I omitted them. I made one loaf with just walnuts (yum) one with raisins and walnuts (double yum) and the third with raisins, walnuts, a pinch of ground ginger and a dash of vanilla extract (triple yum).

Basic Flaky Pie Crust

This is a great recipe. I had never made a pie crust prior to using this recipe, and it was super easy. I don't think i will ever go back to ready-made crusts or mixes. I have made this with shortening and with lard (soy allergy), and both came out well. Thank you!

Sweet Potato-Turkey Meatloaf

This recipe is really good! I decided to cut down on the amount of sauce based on other reviews. I just eyeballed it, but I think I used about half of what the recipe called for. Additionally, I put a little extra garlic, along with some oregano and basil. I made this on Tuesday, and had the leftovers last night, the texture really does improve overnight.

Golden Yam Brownies

I made this recipe for the first day of school. My co-workers really liked them, and the pan is empty. Thanks for a great recipe. Oh, there really is no need to cook the yam or use canned, just follow the recipe and shred the raw, peeled yam and it comes out fine.

Beth's Spicy Oatmeal Raisin Cookies

These cookies came out really well. They are light and chewy. I added nutmeg for a little more flavor, used margarine instead of butter (dairy allergy) , and used a mix of brown sugar and Splenda brown sugar (all I had). Yum!
