About this Cook
I am a baker at heart, but want to branch out. About seven months ago I decided to try the VB6 (Vegan Before 6 pm) diet http://www.npr.org/templates/story/story.php?storyId=103323943&sc=fb&cc=fp and it is going well. The idea is to abstain from consuming animal products for breakfast and lunch. I have really enjoyed eating and cooking vegan dishes, and probably only eat animal products three times a week (instead of the seven allotted by VB6). I am always looking for a yummy new vegan recipe.

My favorite family cooking traditions
Some of my favorite memories from growing up occurred on Saturday mornings, sitting in the kitchen while listening to Motown as my dad made breakfast. He worked late during the week, so weekends were the only time he really got to cook for us. I still prefer a biscuit or muffin that he has made to any other.

Spicy African Yam Soup
Yum! I made this soup for dinner tonight, and it was delicious. I did make a few changes, I used vegetable bouillon instead of chicken broth, added a few red pepper flakes and increased the amount of thyme, garlic, cumin and peanut butter. The flavor is great as is, I just wanted my soup to be a little more intense.

Vegan Mac and No Cheese
This recipe is pretty good, and I will make it again with a few changes. I will reduce the lemon juice a little bit because it is a bit strong for my liking, and I will add a little extra garlic powder (or maybe a little adobo).

Green Velvet Soup
Delicious! I really liked this vegan soup. The recipe is pretty forgiving (I used vegetable bouillon, not broth, only had one potato and used frozen broccoli and spinach). I added a handful of frozen peas (because I had them). For me, the flavor was good, but needed a little enhancement, so I added garlic a little adobo and increased the basil and pepper. Still, I think the recipe was great and will make this again!
