Poor Man's Pepper Steak
My husband said "This is a keeper." I did take advice of others and sauteed the veggies. Then seared the meat. Also added a splash of soy sauce, and used veg. broth instead of water. Thanks for the recipe!

Catfish Creole
Sorry! My husband took 3 bites and said he couldn't eat it. Just tasted fishy to him. I ate it, and had more the next day for lunch. I think the flavors blend a little after it sits, but I'm not going to get through the whole pan of leftovers!

Rick's Caribbean Ropa Vieja
Flavor is wonderful! But it looks awful. (What do you expect of ropa vieja ('old clothes')? I used my crock pot. Should have cut the meat across the grain into smaller sections before shredding. It was stringy. My husband and I liked it, but wouldn't try serving it to guests!
