Classic Waffles

Just the recipe I needed for my new waffle iron. Inever have buttermilk in so this suits me fine. I do use a lot of oil so they don't come out healthy but are crispy and lite.

Crumpets

I neeed to practise these, I think. They are a bit heavier than shop bought, but they taste really fresh and are quick to make for a yeast rise. I used rings of kitchen foil, which were a bit flimsy.

Bananas Foster I

Really simple but also delicious. I wasn't sure the sauce would come together - it had separated a bit, but when the bananas went it, it all cooked down beautifully. This was dessert after Chinese food so I added a pinch of Chinese Five Spice with the cinnamon and Cointreau instead of rum because we didn't have any.

Cranberry Crumble Coffee Cake

We have just eaten this for dessert and there is some left to have with coffee tomorrow. I used plum jelly which sunk to the bottom, and I forgot to check the cake so it had 1/2 an hour more than the recipe suggests. Even so, it was delicious. I'll use it again, a great way to use up left over fruit sauces and jellies. Thanks for the recipe.

Hot Cross Buns I

Great flavor, I used 1/2 tsp cinnamon, 1/2 tsp allspice but kept everything else the same. The dough seemed very wet and I used a lot of flour when handling it and it turned out good in the end. I made a big change to the cross, though. I mixed 2 tbs all-purpose flour, 1 tsp confectioner's sugar, 1tsp cornflour with enough water to make a paste. I piped the mixture on from a sandwich bag before baking. Not like shop bought, but really good. Thanks for the recipe.

Grandma's English Muffin Bread

I used this recipe as it had rated highly and I needed an English Muffin that could be made in a bread machine - too lazy to knead by hand! I cooked them as instructed for Traditional English Muffins. I'm really pleased how much like the real thing they look and taste. Much easier than I expected, I'll definitely be making them again.

Ice Cream Cone Treats

I had to fiddle about too much with the recipe to give this a 4*. In the end the treats looked amazing but they were way too top heavy and very sweet cos of the frosting. Tip for transporting them, use the empty cone box, tape the end shut, draw circles of size needed, cut around 8 times from centre to edge of circle, fold down flaps to hold the cones steady to transport.

Veggie Vegetarian Chili

Hearty, filling and interesting - not what I'd expect from a vegetarian chili! Great flavor, not too spicy but you can laways add more. Was scared of adding bean juice but went with the instructions and was really pleased with the results. Made alongside regular meat chili, mixed up leftovers were great the day after. Can't believe how keen my kids are to eat beans!

Overnight Coffee Cake

To prepare this cake the night before is a wonderful bonus if you are entertaining, one less thing to worry about! This cake was quite heavy but I think that is how it is supposed to be, the flavor was delish.

Toasted Pumpkin Seeds with Sugar and Spice

This recipe has so many things going for it: you can use seeds straight from carving, it is easy to follow, no fancy ingredients. My husband was really impressed, thought I had bought them. The trouble is, I'm just not keen on them so only giving 4*, sorry.

Creamy Butternut Squash With Cinnamon Soup

Simple and delicious. Perfect lunch to come back to after a walk on a crisp fall weekend. I was brave a used as much spice as was suggested and it wasn't overpowering, even for the kids, but I might tone things down next time. The only change was to use water instead of stock, it still tastes great.

Pumpkin Muffins II

I had to give these a 5* rating so other people would try them but I did make a few changes. Less sugar (1 1/2 cups), oil (1/2 cup) and all spices 1/2 the suggested amount. These really moist muffins were great for breakfast but I made some fancier by topping with cream cheese frosting and adding a marzipan pumpkin.

Poppy Seed Muffins

This recipe is great because it uses store cupboard ingredients to make deliciously moist muffins. Maybe deserves 5* but I made a lot of changes though - less salt, sugar, oil, no almond extract, added orange zest to the batter. The glaze is superb.

Passover Chocolate Torte

I found some ground almonds near the 'use by' date as I was cleaning out the cupboard. The all recipes search showed this, what a find! So simple to make but so luxurious, definitely a recipe to keep. Didn't have quite enough almonds so I scaled the quantities down to use 4 eggs and 6inch pan.

Holiday Cranberry Sauce

So simple, my 8 year old daughter made it! So tasty, there is none left! I followed the advice and only used 1 cup sugar and orange juice instead of water. Thank heaven Christmas is only 4 weeks away!

Basic Hummus

I was disappointed by this very thick hummus. I added plenty of extra lemon juice make it 'dippable'. Perhaps it is a little too simple to work.
