Slow-Cooker Chicken Tortilla Soup

I made this following the recipe exactly except that I added a can of black beans per previous suggestions. My family really enjoyed it. Even my picky-polly son ate some. We topped it with a sqeeze of lime juice and ate it with store-bought tortilla chips. It's definitely something I'll make again.

Slow Cooker Venison Burritos

This was a hit at my house! Couldn't even tell it was venision. I topped mine with some sour cream and cilantro but the rest of my bunch ate it per the recipe. Definitely something I'll make again.

Crustless Spinach Quiche

I made this just as the recipe is written and it was delicious! Really nice for a breakfast for supper served with hashbrowns. And, surprisingly good when eaten cold as leftovers the next day.

Peach Cobbler II

I gave this 4 stars because of the changes that I had to make. I read all the reviews and therefore increased the peaches, decreased the sugar to 1c, and decreased the water to 1c. It turned out a really tasty cobbler. I would definitely make it again.

Beth's Peach-Nectarine Muffins

This was a very simple recipe to make and they baked up nice and pretty. They were, however, a little bland even after adding some extra vanilla and cinnamon. Good way to use up peaches in season, though.

Double Chocolate Chip Cookies

Very tasty! I used 2 c. chocolate chips and omitted the nuts for an ultimately chocoaltely treat. They were rich and delicious and actually were better several hours later than just out of the oven. I'll be adding this to my cookie repetoire.

Quick and Easy Pizza Crust

Just fabulous! Makes a great pizza dough in no time. I subbed in 1/2 whole wheat flour the second time I made it with good results. I think this will be the only dough I will make from now on.

Hearty Breakfast Cookies

These are a hit! My kids love getting to eat cookies for breakfast, even though they're healthy. I did sub in some different things to bump up the nutrition factor. I subbed 1/2 c. pumpkin puree for the peanut butter, and 1/2 c. flax seed meal for the wheat germ. I also used the buttermilk instead of water as the author suggested. I only bake them about 16 min. They truly are a breakfast treat.

Unbaked Chocolate Oatmeal Cookies

These are fabulous! I make a batch at least twice a month and my family eats them up at record speed. I follow the recipe exactly (not adding any optional ingredients) except that I add a pinch of salt. Perfect results every time.

Lentil Soup II

Fabulous base recipe. Even better if you doctor it up. I usually add a couple of chopped carrots, celery, and garlic cloves to saute with the onions. Then add some chopped smoked sausage at the end. I omit the italian seasoning if I add sausage. This has become my new favorite soup. Hearty and delish!

Cube Steak Parmesan

I gave this recipe 4 stars because I tweaked it a bit to make it better. I used whole wheat bread crumbs (made in the food processor) instead of saltines and jarred marinara (not spaghetti sauce) to give it a richer taste. It turned out great; not as good as chicken parmesan, but a close second. It's a great way to use up some of the cube steak I have in the freezer.

Banana Bread VIII

I gave this 4 stars instead of 5 because I tweaked it a bit. I added 1/4 milk, 1/4 t. cinnamon, and 1 t. vanilla as other reviewers had suggested. It turned out fabulous; dense, moist, and perfect in taste. I will definitely make it again.

Bunny Cookies

This was a good recipe for a roll out cookie. I used them for valentine's day hearts. I followed the recipe exactly except that I had to add a couple more tablespoons of orange juice at the end to make the dough come together. They baked up nicely and had a nice texture, though slightly lacking in flavor. I iced them and topped that with colored sugar for a wonderful treat.

Luscious Buttercream Frosting

Fabulous frosting! Best I've ever had. So glad to finally find a recipe that uses butter (not Crisco) that really holds its' own. You won't be disappointed.
