Baja Bean Salad
I fixed this for lunch on a beautiful spring afternoon. I added corn to give it a little more flavor and color. I also drained the all of the canned items. The dressing is fresh and light. I served this with romaine lettuce and blue chips. This one was a hit!

Stephen's Chocolate Chip Cookies
These were wonderful. I substituted applesauce for the eggs and it still came out wonderful. I actually made them twice in a week. Everyone loved them.

African Peanut Soup
My husband and I really enjoyed this soup. The dollop of sour cream makes it extra yummy. We will definitely have this one again.
