Green Shell Salad
Just made this for a neighbor potluck dinner and it was good! Something a little different, had sort of a creamy pesto flavor. I used sour cream instead of yogurt, added extra garlic and added a little fresh oregano along with the fresh basil from the garden. I tasted it before adding the parmesan, and I thought it could use the flavor kick (plus I love parmesan cheese), and it definitely added flavor (freshly grated of course).

Corn Dip II
This was a big hit at my get together! It was very hearty. I added a little more lime and cayenne, and used regular corn. Next time I would use finely shredded cheese.

Fried Rice Restaurant Style
Great texture! I toasted the rice in a dry pan for 5 minutes, cooked then cooled on a large cookie sheet. Followed the recipe except used double the eggs and used chopped cooked pork, red pepper and green onion instead.
