I'm a stay at home mom to one little guy, but my career/degree is in Student Affairs in Higher Education and I'll go back one day.
My favorite things to cook
Seems like it always revolves around Italian. Pasta and added items. I love to make a really good recipe (whatever it is) that I know will turn out great. Yay for 5 star recipes!
My favorite family cooking traditions
My family throws Lu'aus for children's 1st birthday, and we always do the traditional pig roast in the Imu (pit), and have all the Hawaiian family favorites.
My cooking triumphs
When I make up recipes that turn out awesome and my husband says, "wow! You should make this again!" He often says, "thank goodness for that allrecipes website". hmmm...compliment? I think he likes the variety in our meals now.
My cooking tragedies
All the other recipes that just get a "yeah, it's ok" from that same husband.

Home Style Macaroni and Cheese
Excellent, thank you! I used whole milk and reduced fat cream cheese (contradictory I know, but all I had on hand), and it turned out fabulous. I also chopped up a little ham I had in the freezer and mixed that in with it. I did use a whole box of the macaroni (12 oz?) so that we'd have leftovers for lunch--there was more than enough cheese sauce. Super creamy and not gritty like my old recipe. I liked the bread crumb topping, some posters didn't--although I used Panko bread crumbs (the Japanese style that are a little lighter than progresso style bread crumbs) and they were perfectly browned & crispy. This is a favorite! My 3 year old said, "Dad, don't take those leftovers to work, I liked this dinner and I want to eat it tomorrow". Bravo!

Almond Mandarin Salad
I make this all the time for dinner, I put it in my regular rotation! The dressing is great. I skip the bacon and add shredded chicken. Thanks!

Guacamole
Excellent! The entire dish disapeared at our party! I feel guilty that people keep thinking I'm a great cook but its really because of all these recipes on this site! Thanks so much! I also used the red onion instead of yellow for more zing.
