Avocado and Tuna Tapas
This is delicious. I used light salad dressing, because I like it better than mayo. I also added some cucumber to give it a cool crunch. Yummy!

Feta Chicken Salad
I used light salad dressing and sour cream and this was so delicious. My husband loved it and he is a finicky one.

Creamy Potato Leek Soup II
I changed two ingredients to cut fat, for the bacon I used turkey bacon and for heavy cream I used half and half. I also used my pressure cooker to cut cooking time. I first cooked the bacon in the cooker, removed and then sautéed the leeks in the grease. I threw the bacon, chicken broth, and Yukon potatoes in with the leeks. I closed the cooker and got up to pressure and timed it eight minutes. Then released the pressure immediately and took a small portion of soup and puree it to thicken the soup. I put in the half and half and simmered for five minutes. WOW, it was delicious
