Whipped Cream Cream Cheese Frosting

Delicious & fluffy! I made a raspberry cream cheese frosting by reducing the sugar by half & adding a half cup raspberry jam. Also, I folded the whipped cream in 1/3 at a time to help make it more fluffy, less runny. Definitely a keepr.

Parmesan Chicken

Excellent! Very easy & tasty. I only needed 2 chicken breasts. I also did as another reviewer suggested & added the melted butter to bread crumbs and added thyme, oregano & garlic powder. ( I sprinkled the extra crumbs on the chicken before baking.) Baked in the oven at 375 for 30 min. Excellent with some spaghetti sauce on the bottom (about 1/2 a jar).

Quick Quiche

With modifications this is a 5 star recipe. I eliminated the butter & bacon and used dried onions instead of fresh...much easier. I also added steamed broccoli on top of the cheese (used mozarella since that's what I had) and added 1/4 tsp dried mustard & 1/8 tsp white pepper. It was fantastic!

Southwestern Chicken and Rice Casserole

Great recipe, but needs a few adjustments to make it 5 stars. First I added 1 can of drained black beans and 2 tsp. of dried onions. I also used garlic powder in place of onion powder. I seasoned the chicken with paprika, cumin & lemon pepper as another reviewer suggested. I had to let mine cook for 1 hr 15 min. Next time I will use brown rice as the white rice got too mushy. Was great as a "dip" with tortilla chips (once the chicken was shredded) and would make a great filler for tortillas. Would also be a great vegetarian recipe without the chicken.

Elegant Wild Rice Soup

This soup was pretty good as written, but needed an additional 2 c of broth. It also needed a little extra somethin' so I added: * 2 cloves garlic (sauteed these with the onions) * 1/2 tsp. white pepper * 1/4 tsp ground thyme After these additions it was perfect! Very easy. I loved the flavor and texture that the wild rice added. I'll be making this again.

Easy Chicken Tetrazzini

For how simple this is it's very good. I couldn't stop eating it! Very tasty and very easy. I used one can cream of mushroom and one can cream of chicken like others suggested. Also added some roasted red bell pepper, lemon pepper and tomatoes since I had some in the fridge. A very easy recipe to modify.

Sesame Pasta Chicken Salad

This was really good and very easy! I only used 1/3 c oil and it was still too oily. Next time I think I'll only put in 1/4 c of the oil, rice wine vinegar and soy sauce. I also added julienned carrots and water chestnuts. I left out the cilantro because I didn't have it, but it was still good. Would also be great with some cashews.

Ten Minute Enchilada Sauce

This got 4 stars only because I had to modify the recipe, otherwise it's a 5! This stuff is INCREDIBLE! I followed the suggestions of other reviewers--I doubled the recipe for enchiladas...only put in 1/2 the chili powder (just used regular chili powder), used regular flour, doubled the spices, and put in 1/4 c less water...I like my sauce thicker. This is the best enchilada sauce I've ever tasted!

Winter Fruit Salad with Lemon Poppyseed Dressing

This was wonderful! I did change a couple of things. I used honey mustard dressing instead of the Dijon mustard, since that's what I had. I also substituted pecans for the cashews and used cheddar cheese instead of swiss. Also added a little extra onion, which helped to cut down on the sweetness. But I'm sure it would be fabulous made as is.

Slow Cooker Cranberry Roast

Absolutely fantastic. I served it to friends who are normally picky eaters, and they loved it! I used the cranberry sauce with whole cranberries, since that's what I had in the cupboard. It still turned out great. The cranberries cook down enough that they're not really noticeable.

Banana Smoothie I

This was great! I added a little bit of nutmeg to mine. My husband said he liked it better than the banana shakes his mom made him growing up. A great way to use over-ripe bananas.
