Middle Eastern Rice with Black Beans and Chickpeas

Very good! I will be making this again. I used curry and added a little extra coriander and cumin. Also added cilantro and some yogurt on the side. Did not use pine nuts or parsley, as I did not have those on hand.

Chinese Chicken Fried Rice II

Very good. I use left over pork tenderloin instead of the chicken, add some frozen peas and carrots, and add an extra egg. I also use a red onion, as the red, orange and green add a nice color to the plate. Everyone enjoys it, so I make it pretty often.

Quick and Easy Tuna Casserole

Needed a quick and easy meal. Had to substitute based on what I had. Used green onions instead of yellow onion, sharp cheddar instead of american, cream of chicken instead of mushroom, and solid white albacore. Also added a little milk. Still turned out tasty. I will make again in some form or another.

Taco Lasagna

Very tasty - my husband, 2 yr old son and I all enjoyed. I used corn tortilla chips to give it some crunch. I made my own taco seasoning. UPDATE: Made a second time as per the recipe. It was still very good, but I prefer using the chips for the extra crunch. My husband requests this meal become a regular.

Black Bean and Couscous Salad

Very good. I substituted one can of kidney beans for one of the cans of black beans. I also added extra couscous and broth since I wanted to use the whole 10z box of couscous and 14 oz (2 cup) can of broth. I doubled the ingredients in the dressing. UPDATE: Made a 2nd time and substituted chopped steamed baby carrots for the red pepper. Otherwise, I did the same as I mentioned above. Very good again. Toddler and husband prefer the baby carrots. I like either way.

Oatmeal Pancakes II

I make these pancakes a couple times a month, but I never measure and I make a few modifications. I use a combination of old-fashion oats and quick oats for texture, and I soften them in the microwave with some milk and water before adding the other ingredients. I substitute milk for the buttermilk, and I often add blueberries. We top with real maple syrup, which makes these pancakes incredible. You'll need to add extra milk if you make the pancakes my way... don't ask how much b/c I never measure. Enjoy!

Blackened Tuna Steaks with Mango Salsa

Boilermaker Tailgate Chili

Very good. I will make this again. I omitted the celery and green chili peppers, substituted kidney beans and black beans(rinsed and drained) for 2 cans of chili beans, and substituted 93% lean beef for ground chuck. I cooked in our crock pot for about 7 hrs.

Holiday Chicken Salad
