Creamy Spinach Tortellini
I thought this dish was quite rich, and lacked a bit of flavor as written. I'll probably make this again, but will use neufchatel cheese instead of cream cheese and will add some seasoning for more flavor.

Eggplant -- Easy, Good and Tasty
This really was easy and tasty! I didn't have Italian dressing; next time I'll add some Italian seasoning. I will definitely be making this again and again!
