White and Wild Rice Pilaf

I used a brown/wild rice blend for this dish and toasted the rice with the onions and garlic. I added a little rosemary as well, but it was still very bland. However, this worked well as I served it under Grilled Adobo Chicken and drizzled with the sauce.

Grilled Chicken Adobo

I couldn't taste this due to a sinus infection, but my husband claimed it was excellent. I served this with a brown and wild rice pilaf and an apple salad.

Broccoli with Garlic Butter and Cashews

Delicious! I only used 2T butter and substituted chopped walnuts for the cashews. I used lite soy sauce and frozen broccoli. I also added about 1 tsp of freshly grated ginger. Next time I plan to try this with cider or balsamic vinegar instead of white. The broccoli had a ton of flavor.

Grilled 'Fusion' Pork Chops

I used 3 limes and 1 lemon to make double the marinade (for double the chops). I did not use garam masala as I didn't have it on hand. I used fresh minced garlic and ginger, and we grilled them. These were hands-down the juiciest and most tender chops I have ever eaten. They practically melted in your mouth. This is a definite keeper!

Big Al's K.C. Bar-B-Q Sauce

Awesome sauce! I was short on ketchup (only 3/4 cup) and was out of tomato sauce. I added an 8-ounce can of tomato paste to the ketchup and balanced out the thickness by adding Southern Comfort to reach 2 cups (I was splitting the recipe in half). I skipped the vinegar since I added alcohol. I left the spice amounts as-is in the full recipe. When it was done, I took 1 cup of it and added 1 cup of applesauce for Ted Reader's pork chop recipe. Delicious!

Ultimate Shrimp Scampi

This was very good! I skipped the avocado since I didn't have any on hand, but the sauce went very good with shrimp and pasta. I added fresh tomatoes and loads more garlic since we are garlic lovers in this house.

New Waldorf Salad

Spinach and Strawberry Salad

I subbed balsamic for the white wine vinegar and added chopped pears and toasted chopped walnuts and sliced almonds. I also subbed honey for the white sugar and cut the amount. Delicious!

Clayton's Pork Chops

I did this a little differently. I combined the soups and sour cream together, browned the chops in a skillet and the put them in a bakin dish with the soup mixture and a bag of thawed frozen green beans. I added some shredded cheddar and baked @ 350 covered with foil for about 40 minutes. I took the foil off, sprinkled with fried onions and baked for apx 10 minutes longer until the onions crisped up and browned. Seasonings I added included red pepper flakes, garlic powder, a dash of clove, salt, and pepper. Everyone loved this dish and it even made the green beans (which I hate) taste edible!

Amish Meatloaf

I cut the sugar out the meatloaf entirely and halved it in the glaze and I still felt this was too sweet. My family loved it though. I didn't bake mine in a loaf pan. Instead, I shaped it and baked it on a wire rack on a cookie sheet to drain off the fat. It was still very soft/loose to cut. The bacon didn't crisp up at all and was very fatty/raw-looking even after an hour of baking. If I made this again, I would decrease the sugar even more and omit the bacon entirely.

Grandmother's Buttermilk Cornbread

I cooked 3 slices of bacon in my cast iron cornbread pan and drained out all but 1T of the drippings. The bacon was crumbled into the cornbread, and I added 2/3 cup of sweet corn. I omitted the salt since I added bacon. It cooked in the cast iron for 30 minutes and came out moist and delicious!

Chocolate Banana Bread

I used 1/2 c. cocoa, 1/2 c. walnuts, and 1/2 c. cinnamon-raisin peanut butter. This bread was very moist and the flavor was pretty good. I'd definitely make it again.

Apple Cranberry Crisp

I used 2 Fuji apples and 3 Granny Smith for this recipe. I think it was a good idea to add some sweet apples in there because otherwise it would be quite tart. I also used unsalted butter for the topping. It is a very good crisp though and super easy to make.

I used 3 slices of real bacon & added some mozzarella cheese as well. Otherwise I followed the directions exactly as written. It was fantastic! My kids ate it up as well & this one will definitely be a keeper for being so fast & easy.

Chicken Supreme III

I took a lot of liberties with this recipe. I cooked the chicken with carrots, celery & onion. I was out of stuffing mix, so I used Italian style breadcrumbs, only 2T of butter & about 3/4 c water. I also used Cream of Celery soup, substituting milk for the water. I cut the cheese down dramatically (cheddar/jack mix) to just be moderately sprinkled over the top, maybe 1/3 cup. It was creamy, not greasy, and very good. Even my three picky children ate it all up!

Oatmeal Dinner Rolls

Theses rolls were absolutely delicious! I made them exactly as the instructions stated & they came out beautifully. My three kids wolfed them too, always a plus with a new recipe. Will definitely be making them again.
