California Salad Bowl

Fabulous! Like others, I used black olives instead of green. First time I made this I thought the dressing could use a bit more "zip", so second time I added a bit more garlic and a few extra dashes of tobassco. I usually serve the crushed chips "on the side" so they don't get mushy. Perfect!

Chocolate Brittle Surprise

Scrumptious! I made them with graham crackers as suggested by others. I'm going to make it again today with cinnamon grahams. GOOD STUFF! Update: I like these better with the plain graham crackers (instead of the cinnamon grahams). Making my 3rd batch today - everyone LOVES these. I now put toasted coconut on the top (rather than nuts) - YUM!

Apple Cake III

DELICIOUS! After reading reviews, I added a tsp. of cinnamon to the batter, and I cut the apples in halves or thirds. I also used 1/2 cup chopped pecans rather than a cup walnuts. Served with vanilla ice cream and it was fabulous!

This is delicious! I was a bit concerned about it being too salty after I read the previous reviews, so I added a couple of teaspoons of white wine vinegar to the marinade and it was fine (not too salty).

Pineapple Bread Souffle

Served this with Easter dinner and everyone loved it! I used Splenda instead of sugar and was a bit skeptical when mixing everything together as the mixture was lumpy and inconsistent; however it baked up beautifully and was delicious!

Champagne Shrimp and Pasta

Absolutely fabulous! I doubled the recipe (for company) and everyone ooh-ed and aah-ed over this one. I LOVE the shallots in this recipe. Fortunately I increased the shallots (used 1 whole shallot for a double recipe) and it was just delicious. Easy to make, too! AND the leftovers were even better reheated the next day!

Firecracker Grilled Alaska Salmon

Delicious! I couldn't find peanut oil, so I used walnut oil. Also, I ended up marinating this for a day and a half. It was so VERY good. We love salmon and this is our new "favorite salmon" recipe.
