Briam (Greek Mixed Vegetables in Tomato Sauce)

Delicious! If you are using 1/2 cup olive oil, you don't need to add water, just cover the pan with aluminum foil. It should be done in about 1 hour or less at 400F. Serve with freshly baked bread! Thank you for the wonderful recipe!

Hearty Baked Rigatoni

Very tasty! Can be done without ricotta cheese, but it's going to be less moist. I've done it before, adding about 1/4-1/2 cup milk in the place of ricotta.

Chicken Dilly

Good but not perfect. Something misses that will make the taste even better. Also, next time I might substitute dill for oregano, or for basil, as dill was not very complementary to the eggplant/tomato.

Stuffed Eggplant with Shrimp and Basil

This recipe was good. I used dried basil and omitted the bread crumbs. I added half onion chopped. Overall, it needed more seasoning. Next time will try adding seasoned tomato sauce, and fresh basil like directed in the recipe.

Zucchini Galore

Very delicious! Thank you! I took your idea to serve it with pasta. It was perfect for a hot summer night that you don't know what to cook! Very refreshing and light! I spiced it up with some basil, mint, marjoram and black pepper.

Easy Pie Crust

This recipe was really easy and the crust was wonderful. I doubled the recipe for my bigger pan, and I would suggest to be careful with the amount of salt you are adding if you double the recipe. Mine turned out a little salty. Maybe add 1,5 times the salt instead of 2.

Flourless Chocolate Cake II

This was very interesting! I made as directed, but cooled only for 10 minutes in the pan, as I had to dig in after that. It was delicious and easy to take out of the pan after cutting it into pieces. Make sure you butter the pan very well, and dust as well, as the recipe suggests.

Authentic Middle Eastern Hummus (Chummus)

Delicious!!! For the Americans who can't do without garlic here is another way to add it without overpowering your hummus with it: In the last 5 minutes of your boiling water with beans add some whole cloves of garlic in the water and let them boil with your beans. Add them in the blender with the rest of your ingredients, and bon appetit!

Corn Tortillas

That was my first time making tortillas ever; they were delicious!!!!! The dough texture seemed weird (pretty flaky) at first but I gave them a try anyway. Btw, I used 2 cups of maseca and 1 and a half cup water approximately. Make sure after you uncover the dough to keep it moist, away from drying sources. I rolled the dough between two pieces of parchment paper, and had no problems with stickyness. I could quite make them round, so after rolling and before putting them in the pan I cut them in rectangular, triangular, etc pieces and sticked them in the pan. The most important thing in this process is to not forget to cover them after you take them out of the pan. I put them in a plastic bowl with lid. When I took them out of the pan they were hard, but after taking them out of the bowl they were soft and delicious! Good luck!

Catfish Gumbo

This was my first time making gumbo and we didn't enjoy this at all :( Without the fish it smelled great, but the fish ruined everything. For first timers I would suggest chicken instead of fish.

Cajun Compromise Catfish

This was awsome! We totally devoured it! You do need to double the recipe for the coating. BTW, I didn't have time to let them sit in the fridge, so I just started frying them as soon as I had them all prepared. It worked just fine, no problems whatsoever! Thanks for the recipe!

Wacky Cake III

Followed the recipe to the T! This cake baked beautifully, and it was very nice. The proportions of the frosting ingredients sound a little bit wacky, but they work; nevertheless, I think I will try a different frosting next time as this one is VERY sweet. Thanks for this interesting recipe!!

Shortbread Meltaways

They were good overall, but I wouldn't call them meltaways. I did add a little bit more confectioner's sugar, as I tasted the batter and it was a little bit plain. They baked beautifully! Most probably will be making again.

Cinnamon Sugar Biscotti

Very tasty! I omitted the final sprinking with sugar and cinnamon. I also substituted vanilla extract for a pinch of cinnamon and a pinch of nutmeg. Worked just fine. Great with your morning coffee!

I didn't particularly enjoy these cookies. Maybe i did something wrong, although I followed the recipe... They weren't sweet enough for some reason, and it took us a loooooong time to eat them all...
