Cranberry Orange Relish with Orange Flavored Liqueur

This recipe is truly great! The taste is so refreshing. For a slight variation: add 1/2 cup pecans to the food processor. This thickens the relish slightly and adds another layer of flavor.

Tuna Tartare

I've tried this twice and it's really a good recipe. The second time I used white sesame oil instead of the olive oil and also added a bit of thinly sliced green onions and just a bit of finely minced garlic. Great both ways!

Broccoli Rice Casserole

I was surprised, but this is really a very nice recipe. I cut the recipe in half because there are just the two of us, and used leftover long grain rice from the previous night's dinner. I used the cream of mushroom soup and some Kraft classic (mix of American and cheddar) grated cheese in a two cup bag. I topped the entire casserole with sliced tomatoes I was trying to use up. The rice is creamy and tastes like an Italian risotto dish. Easy, quick and flexible recipe. Husband loved it!

Apple Enchiladas

This is a wonderful and versatile recipe. I've now made it a couple times with great results. I substituted Stouffers frozen escalloped apples(thawed)for the pie filling. This was easier than making my own filling and tasted better than the canned filling. I also spread each of the tortillas with about 1 tablespoon of cream cheese before adding the filling. Sprinkling about 1 cup of chopped pecans over the rolled tortillas gave them a very pretty appearance and added to the taste. The last time I made it I used cherry filling and everyone loved it! It's great for dessert or for a breakfast brunch.
