Garlic Salmon

I loved this recipe, I will make this over and over. I added a touch of olive oil and threw the tin foil packet on the grill for about 20 minutes. So tender and flavorful. Thank you!

Gravy Baked Pork Chops

These pork chops come out so moist and the flavor is awesome. We bake 20 minutes covered then 20 minutes uncovered, and they come perfect. Thanks for the great recipe.

Mom's Zucchini Bread

Yummy! I made a few changes based on some of the reviews. Used 1 c. Wheat Flour & 1 c. white, 1/2 c. applesauce & 1/2 c. oil, 1 c. brown sugar & 1 c. white sugar and a spoonful of ground flax seed. Topped with a crumb topping, added about 15 minutes after I started cooking. Oh I also added chunk semi sweet chocolate and macadamia nuts instead of walnuts. Will definitely make this again, Thanks!

Baked Ziti I

You can do so many things with this recipe. I usually use up my leftover spaghetti & meatballs. After cooking the noodles I toss them with ricotta so it gets inside the noodles. Haven't tried it with the provolone yet. But I use mozzerella & parm.

Oatmeal Peanut Butter Cookies

These were pretty good, a little chewier that I like. I used 2 sticks of unsalted butter, a little extra peanut butter, a little extra oats and couple handfuls of choc chips. My husband ate most of them :-)

Sweet Corn Cake

Never even thought to make this, saw this reference on the red enchilada sauce and tried it with my enchiladas. Made it with no changes (hoping that masa casera and masa harina are the same thing???) and it turned out perfect. I used to love to eat this at Chevy's, this recipe is better! Thanks!

Red Enchilada Sauce

This was the best enchilada sauce we've ever had, first time I've ever made it. Took the advice of others, doubled the batch, used chicken broth, a bay leaf, added in a few chipotle chili's in adobo sauce to the salsa then blended. Also used pure California Chili powder. Simmered for about 2 hours. Next time I'll triple the sauce for 2 trays of enchiladas. I like to add a few spoon fulls of sauce into the ground beef once it's finished browing. Made with Sweet Corn Cake which was also a first and out of this world. Thanks so much for the recipe! I'm sure I'll be making this a lot.

Baked Pork Chops I

Very Nice...I sauteed up some mushrooms, onions & garlic and added it in with the soup mixture. I also added a few drops of hot sauce to the eggs and kicked up the seasoning in the flour & bread crumbs. Cooked 40/25. YUM!

Spicy Rapid Roast Chicken

I've made this 3 times now and we LOVE IT!!! I add some broth, onions and garlic to the bottom of the pan, then about 1/2 hour before it's done (before the liquid is dried out) I add in more broth, makes a wonderful gravy. This usually takes about 10-15 minutes longer to cook, I just check the temp. a few times. I think the flavors are perfect, thanks for the recipe!!! YUMMO!

Broccoli Chicken Casserole I

My husband loved this. I took the advice of a few others, added cooked egg noodles to the bottom, cooked the chicken in broth, 1/2 can of cream of chicken soup, bay, garlic, onions, a little beer :-) and some seasonings then shredded the meat. I also let everything cool then combined veges and meat with the soups & 1 cup cheese, then topped with with the dry bread crumbs which I tossed w/a little melted butter, pored some of the remaining cooked broth over then topped with cheese & pepper. A few dashes of cayenne mixed in gives it a little zip. This one's a keeper.

Butternut Squash Soup

Wonderful recipe, went over huge w/my guests. Here's my little changes... Used chicken broth instead of water and broth cubes, cooked squash in oven in about an inch of water/cut in half for about 30 min. first. Added a bit of garlic and tiny amount of ginger for zip to the onions. And only used 1/2 of the cream cheese. Served with a dallop of sour cream and a couple dashes of tobasco. YUM!!!

Sunday Dinner Rolls

Perfect Roll recipe. I cut in 1 stick of cold butter instead of the oil, did the night before, then did half the batch like dinner rolls and half the batch like croissants and let them rise again, brushed with melted butter before baking. Makes a lot of rolls. Going to use this for thanksgiving.

Blue Cranberry Sauce

This is a great recipe. I cooked the cranberries w/1 C. OJ, and added in 1/4 C extra sugar. Once I removed from heat I added 1/2 c. Frozen/Thawed Blueberries & 1/2 C. Raspberries. Cooked the day before, then warmed back up before serving. I might add a little more sugar next time to cut the tang a little more. YUMMO!Froze the unused portion.

Caesar Salad Supreme

Wow, this was the best caesar dressing I've found. I used roasted garlic to cut the bite and thinned it out a bit with olive oil. This is the one! Thanks!!!
