About this Cook
I'm a cheerleading coach "daylighting" as a secretary. I recently started to cook at home more often. I have fallen in love with All Recipes. I am here daily, looking for new recipes or updates to old favorites. My mom wasn't the greatest cook growing up, but she has gotten much better. A few of my "staple" meals are ones that my Dad created or made often for us. I enjoy spending time in the kitchen trying to create new favorites.
My favorite things to cook
I'm getting alot better with my cooking, I have had more "triumphs" than "tradgedies" recently. I have however mastered "comfort foods" like, chilli, shepards pie, meatloaf, shrimp creole, american chop suey, sausage & peppers, baked macaroni & cheese. I have added homemade pizza and pizza dough to my repertoire, my secret.... put fresh pesto on the dough before the sauce or toppings. It makes all the difference in the world!!!! I don't know what I would do without my crock pot, bread machine or my George Forman grill. These are staple machines in my kitchen!!!!
My favorite family cooking traditions
My parents always host an Easter Brunch on Easter morning. I hope that I can continue the tradition someday of baking the danish struedle, the fritata, and coloring & hiding the eggs. Everyone looks forward to coming to my parents house & it is the one time of year you are assursed great food, fun times & pictures of the kids (3rd generation now) decked out in thier Easter bonnets, hunting for eggs.
My cooking triumphs
Pizza is my new truimph, I was afraid I wouldn't master this fine art, but I seemed to have pulled it off. Who knew that an Irish gal, could please the Italians with her Pizza???
My cooking tragedies
I had the fire department at my new apartment 3 months after we moved in because I was broiling steaks and left them to cook for too long. As soon as the firefighters showed up they asked who it was that couldn't cook? Oops, I haven't attempted that ever again!

Quick and Easy Alfredo Sauce
Wow, where was this recipe the first time I attempted Alfredo Sauce? This recipe is perfect exactly as written. I didn't change a thing except the quantity. I changed the portion size to one, and still ended up with 2 servings.

Quick and Easy Chicken Noodle Soup
I made several adjustments to this recipes, hence the 4 star rating. I used an entire 48oz box of Swanson's MSG free low sodium chicken broth, and 2 Herb-ox msg free chicken boullion and 4 cups of water. I sauted the onions, celery, and carrots in some olive oil rather than the butter. I used a rotisserie chicken and picked off all the meat (except the breasts, I saved them for another meal this week) and just dumped that into the pot with the veggies and the broth. I let it come to a boil then let it simmer for about an hour. I didn't have whole bay leaves so I used someone else's tip from A/R and emptied a tea bag and added my bay leaf pieces and let that stew with everything. I removed it right before serving. I used egg noodles and cooked them in a seperate pot so they wouldn't get all soggy. I can't wait for leftovers for lunch and dinner!! Even the sick DBF liked it, though he only ate a few bites he said it was good. I didn't add any other spices except for the bay leaves. No salt, or pepper or the other spices the recipe called for. Didn't want DBF to not eat it because it was too spiced up.

Basic Pasta
I tried to make this recipe last night. I followed the directions as well as some recommendations. I doubled the recipe, used half bread flour and half all purpose, and added some olive oil. I have never had fresh pasta, that I can recall so I'm not sure what this should taste like, DBF is Italian and comes from a family that knows pasta. He said it was off somehow. After I mixed it in my Kitchen Aid mixer, I kneaded it and let it rest for about and hour. It was a little tedious to roll out with a rolling pin, but I think I got it fairly thin. I let the noodles dry for a few minutes before I cooked them. They ended up coming out rather mushy and slimy. I think I may have over cooked them, I really don't know. The sauce I made with it was really good, but the pasta wasn't what I expected. I don't know what I did wrong. Perhaps I will make this again using semolina flour and only boil the pasta for a minute or 2 not the 3 or 4 I did. This was a good recipe to start with and would recommend it to someone who is just starting to make pasta, it seems like it is a good jumping off point.
