Salsa De Tomatillo
Roasting the tomatillos results in a much thicker salsa with the added flavor from roasting.

Pie Crust IV
Got great flavor & consistency adding a bit of powdered sugar and substituting half the shortening with butter, which was added as frozen by grating to minimize melting while working the crust.

Javi's Really Real Mexican Ceviche
Scaled down and only used shrimp, but this is a great foundation recipe for ceviche. Certainly as enjoyable as ceviche we've had at quality restaurants.
