About this Cook
My favorite time of the day is settling into the kitchen to prepare dinner with a glass of red wine. I do not rush through the preparation and find it very relaxing. I have usually decided what I feel like before I am out of the shower in the morning and will look for something new to make at least a couple of times a week.
My favorite things to cook
I mostly like to prepare main dishes but lately, I have developed a bit of a sweet tooth. Pictures of sweet things are starting to entice me to bake although I have had more success with main courses. Love to try new things.

Buffalo Chicken and Ranch Wraps
I did not follow this exactly. I omitted the bacon, dredged chicken in flour/salt/pepper and browned in olive oil. Melted the butter, added about 1/2 C. chopped celery, added Frank's hot sauce and about 2T ketchup till heated. Coated chicken with sauce. On tortilla, in this order about 2T mixture of shredded cheddar/monterey cheese, chicken mixture, halfed cherry tomatoes, about 1T. light ranch and some romaine lettuce. These were amazingly tasty. Thanks for this recipe. I just wanted to lighten it up a bit.

Glazed Pork Tenderloin
this was very tasty and very light. The only thing I did differently was to brown on all sides in my cast iron on stove and transfer to oven in the same skillet. I did not have fresh rosemary so substituted dried. It turned out really nice.

Restaurant-Style Coleslaw I
This was really good, however, I think you could do without either the milk or the buttermilk. I did use the packaged slaw because that's what I had but there just seemed to a little too much liquid that settled at the bottom after it sat for a bit. The flavor was great and I would def make again.
