Chicken Enchiladas with Creamy Green Chile Sauce

This recipe was great, the only real cahnge I made was to saute the onions before adding them to the chicken mixture. Next time I make it I will saute a chopped red pepper with the onions and maybe add some spinach into the mix too just to add some veggies and nutrients. Thanks for a new keeper recipe.

Maple Baked Pork Loin Roast

I cooked this is the oven on a baking sheet with the roast covered in foil for 1 1/2 hrs, I uncovered it and cooked it for another 30 minutes. The whole house smelled like pancakes with maple syrup. My husband loved it

Barbecued Beef

My husband loved this and could not stop eating it. I froze the remaining liquid after the meat was cooked to separate the fat and it worked great.

Chicken Tortilla Soup V

Great, the only changes I made was only using 1 can of chicken broth and 1 can of water (to try to reduce the sodium) and I added a can of diced tomatoes with green chilies.

Cheesy Italian Bread

This bread took longer than stated simply because it needed to rise for almost 2 hours but it was worth it. It had great flavor and texture and may work great for pizza crust too.

Easy Pie Crust

I used this crust with the crab quiche recipe and it was great. I modifyed the recipe a little by substituting 1/2 the all purpose flour with whole wheat and it was wonderful.

Crab Quiche I

This was great. I used canned crab and followed others advice by adding some green and red pepper, an extra egg (eggbeaters), one tablespoon old bay and a little extra crab. I will make this again.

Italian Zucchini Boats

I have never been fond of zucchini however I really enjoyed this recipe. As another reviewer suggested I sautéed the pulp with a little fresh garlic and onion and instead of using tomatoes I used a little mild chunky salsa because it was all I had on hand. Very good and it got me to eat zucchini.

I did not think the chicken had much flavor but it did not taste bad either. We added some chicken and herb flavored rice and it was pretty good. I will probally make it again if I remember to.

Coconut Tilapia with Apricot Dipping Sauce

This was a great meal that I will definatly meake again. The reason I gave 4 stars instead of 5 was because my husband and I both liked it but neither of us could eat our entire piece of fish because it was a strong sweet flavor (we love sweet too) that got a little old.

Speedy Brownies

These brownies were very good, I only had 4 eggs so the brownies were a little fudgier than I typically like in the center but they were still great. I used whole wheat flour, 1/2 c applesauce and 1/2 cup oil and it worked out well. Thanks - quick, easy and taste great.

Mexican Turkey Burgers

The first time I made these I followed the directions exactly and loved them. The second time I thought I would use tofu crumbled up instead of turkey. It tastes really good but the burgers would not stay together so it was more like loose taco meat. Either way I love this recipe.

Bob's Bean Salad

Chewy Chocolate Chip Oatmeal Cookies

These were awesome, not as chewy as I thought but my cookies took 20 minutes to cook not 12. I also would reccomend for those who love chocolate use normal size chocolate chips. I used a bag of mini chips and it just does not taste as chocolatey as regular chips.
