Tangy Slow Cooker Pork Roast
This sounds really good. And very adaptable. Carrots and celery with or without whole garlic cloves would be nice too.

Hot and Sour Chinese Eggplant
I've made this three or four times now and it's starting to become a favorite. Tonight I had some extra ground pork so I browned that up, set it aside, and added it back in when the eggplant was cooked. Then the sauce and then served it over white rice. It was great.
