My favorite things to cook
italian. slow-cooker concoctions. salads-pasta, potato, leafy. i've spent the past year (2007) learning all about heart-healthy cooking. sometimes, i'd love to just throw a stick of butter in for flavor, but, most of the time, i've enjoyed figuring out how to make our meals healthy and still flavorful. it's a proud feeling when people dig in to your cooking and then you can tell them it's also healthy and they don't have to feel guilty for eating it.

Greek-Style Green Beans
This was a delicious, healthy side dish. I was going to make sauteed mushrooms in addition, but ended up just adding the baby bellas to this. It was excellent, but would have been without as well.

Chuck's Favorite Mac and Cheese
This was awesome! I did change quite a bit, but I'm sure it would be perfect as is. Didn't need to add milk. I think it would have been way too soupy. Did about 8 oz. more cheese than called for but really I don't think it was needed. I also added mozzarella (in place of one sour cream, monterrey jack (subbed some cheddar), and provolone and did not do the bread crumbs on top. Next time I might do about 1/2 the bread crumbs mixed with cheese on top.

Oyster Stuffing
I've never made or had oyster stuffing and my husband hasn't had it in years, so this year being the first to do it ourselves, we found this recipe and it was excellent. I never eat much stuffing, not loving it or disliking it really, but I've even gone back for leftovers with this one. Thanks Erika!! I was sooo worried about doing an oyster stuffing and never having made it before. I followed the recipe exactly (so unlike me) and it was easy.
