Pumpkin Gingerbread
Super! I baked at 325 to keep the big loaves moist and even. I made one batch with fresh pumpkin and one with butternut squash, the butternut was just as good if not better. Thanks!

Thai Pumpkin Soup
We added fresh ginger instead of lemongrass, and cooked chicken after blending, it was really good!

Baked Spaghetti Squash Lasagna Style
I followed this general recipe and added meatballs and ricotta cheese. It was amazing!!! The squash keeps a nice crunchy texture even after being baked for so long.
