I've been a pescetarian (vegetarian who also eats fish) for almost five years now due to a family history of heart disease. I live with my boyfriend who is a burger-&-fries kind of guy, which challenges me to find things that both of us can share. My cooking triumphs
I feel successful when I get my boyfriend to try, eat, and like something of which he has previously expressed dislike. The Seven Layer Tortilla Pie recipe from this site helped me to accomplish this because my boyfriend now enjoys black beans.

Seven Layer Tortilla Pie
This is a tasty and incredibly quick and easy recipe to make. It was especially tasty because we added avocados and low fat sour cream upon serving. Since the fat-free tortillas I use are about 9-inches in diameter, there were only enough beans for five layers. I omitted the cilantro because we didn't have it on hand and I didn't think my bf would it (even though I love it). I didn't mash the beans until smooth because I thought a rough-mash texture would hold up the layers better. When slicing the pie, the layers held their shape, making for a nice presentation. This recipe is a real success for me because I got my bf to try black beans and now he asks for this dish all of the time!
