Classy Green Bean Casserole

This was a huge hit at Thanksgiving! I used fresh, steamed green beans. I also added some french fried onions in with the beans (because I couldn't be without them) but stuck with the ritz crackers on top. Delicious! There was not one bite left over!

Mmm-Mmm Better Brownies

I used a whole stick of melted butter in place of oil, as suggested. So. Friggin. Good. My husband, 3 year old son and I polished off the pan in less than a day.

Grilled Lemon Chicken

This chicken turned out amazing! Due to a last minute change in dinner plans, I ended up marinating the chicken in the fridge for 24 hours. It came out moist and flavorful on the grill...my husband raved after every bite!

Veggie Pizza

I omitted the sour cream and used 12 ounces of whipped cream cheese. This worked wonderfully! This was a huge hit at a July 4th party this weekend. The platter was empty within an hour and I had even made a double batch! I made the crust the night before as well as the cream cheese mixture and let it refridgerate in a bowl overnight. I didn't assemble until right before we left. This was sooo yummy!

Eggnog Cookies I

I made these last night and they turned out beautifully! Followed another reviewers advice and substituted 1/2 the white sugar for brown. They stayed very moist. Sprinkled the tops with powdered sugar. Very pretty! So easy to make, especially for a novice baker like myself. My husband (who doesn't like eggnog) loved them as did my two year old!

Broccoli, Rice, Cheese, and Chicken Casserole

Although I thought the flavor of this dish was excellent, the consistency was too soupy for our taste, even after increasing the rice to 3 cups as suggested by another reviewer. If I make it again I would omit the milk and cut back on the cheese (i did use 16 oz of shredded cheddar rather than velveeta). Some toasted bread crumbs or french fried onions on top might also help to give it a little crunch.

Tarragon Chicken Casserole

This was just okay for me. I thought the tarragon was overpowering. I did like the texture and heartiness of the casserole. It needs much less tarragon and some other flavor added that I can't put my finger on to give it more kick.

Slow Cooker Vegetable Beef Soup

Made this for the second time today! It's sooo good! Took other reviewers suggestions and used flavored tomatoes, fresh potatoes and carrots. I also added about 4 ounces frozen green beans. Also added a bay leaf and a pinch of cayenne pepper for a little kick. Delicous and hearty, perfect dinner for a cold fall day in the Midwest! Thanks!

Pork Tenderloin with Creamy Herb Sauce

I've made this twice now and my husband and I just love it! I use chicken bouillion instead of beef (just cause that's what I have on hand) and add a little more wine than the recipe calls for. :) One of our favorite meals, by far! The sauce is exquisite!

BLT Salad

This is SO delicious! I'll be making it for the second time tonight. I add a little sharp shredded cheddar. Served with a baked potato, this is a perfect summer meal. My husband actually stopped me mid-sentence during dinner, and said, "Oh my God, is this good!"

Salsa Chicken Burrito Filling

This was a HUGE hit with my husband! I ommitted the hot sauce and used only 3/4 of the taco seasoning. Still very flavorful! Added white rice flavored with chicken bouillon, fat free refried beans, low fat sour cream, and shredded cheddar to make the most delicious burritos ever! This will definitely be entered into heavy rotation at our house! Thanks!
