Bean Potato Enchiladas
This was very good! I sauteed the onion and a little green pepper before adding it to the potato mixture. We had some left over and used it for a quesadilla the next day and it was good there too.

Roasted Sweet Potatoes & Onions
This is a good combo! I forgot to cover it, and it was still fine. The onions get nice and caramelized and the amaretto has a nice sweet flavor that compliments the sweet potatoes.

Pot Roast in Beer
This was great. I used extra garlic and omitted the cloves, though if (when) I do this again, I'll use them. We used a bottom round, and it was really tender and made super sandwiches through the week.
