Swiss Chicken Casserole II
I've tried a few of these "Swiss" chicken recipes, and this one is the best by FAR! The stuffing mix on top was not dry all all, making it a much better dish! I pounded the cutlets a little bit, and only used 3. I also used stove-top cornbread stuffing, and it was delicious. Next time I would add a sprinkle of salt, and a splash of sherry wine for more flavor, but this one is a keeper. Quick,,easy and yummy!

Green Chile Frittata
Looking for an egg recipe we can have for dinner, so I tried this one, and it was surprizingly good! I think it needed more chiles, cheese and some black pepper but other than that, a nice dish. I did have some flour lumps when mixing with the eggs, but just continued to stir until most broke down. Will make again...maybe with a different cheese and veggie.

Incredibly Cheesy Turkey Meatloaf
This was good. I used one package of turkey..1.3 lbs..and used only one egg and less breadcrumbs and milk. I also added worcestshire. Sticky when mixing, so wet my hands in cold water which seemed to help. Formed it in a loaf pan, and then dumped it out into a 13 x 9 pan coated with foil for easy clean-up, and no cheese drips in the stove. Will make it again!
