Chicken Enchiladas II, Chile Verde

Still like corn tortillas for the flavor, but this is very simple and easy. Not bad for flour tortillas. Used white onions, added some Mexican chicken seasoning, and some black olives. This is definitely a recipe you can "play" with.

Chicken Noodle Casserole I

I thought this recipe was really good, and easy to make. Cut ingredients in half, and actually added saute mushrooms, garlic, green peppers, and green onions. At last minute also threw in some artichoke hearts as I stirred in the chicken and noodles. Turned out great, and filled a 9 x 9 casserole dish.

Like others, this is really simple and very tasty. I did cut this recipe in half and added a pinch of flour, and some parmesean. Quick dish to cook, so have the rest of your meal ready!

Crunchy Lemon-Dill Salmon

Thought this was really tasty. My husband liked it so much I taught him how to make it. Simple, add a green salad some rice, and you have a great dinner. (We made it with a defrosted frozen salmon fillet and was fine...)

Chicken Marsala

Followed recipe as noted, stayed with the sherry and marsala, but did add garlic at the chicken browning, and chopped onions with the mushrooms. The flavor is great, sauce thickened up fine without adding additional ingredients. But I made sure the chicken was fully coated with the flour mixture. Really like the flavor!

Angel Hair Pasta with Shrimp and Basil

Really liked this recipe, easy to do. Followed previous comments, used (2)14 oz. cans of tomatoes, and lightly drained. Also was very careful about quick cook time with prawns. Used really large ones, I think a medium to large would be a little better. More but smaller prawns.

Chicken Stir-Fry

This may be slightly bland, but a great starter recipe to begin to add your own touch. I used 4 half breasts, and I think I had too much meat. Wondered about substituting shrimp. Nice simple dish.

Creamy Au Gratin Potatoes

Followed the recipe pretty much, minced my onion, and did add crumb topping the last 15 minutes of cooking. Was nervous abut the 1/4 thick potatoe slice being completedly cooked, but they were fine.

Chewy Chocolate Chip Oatmeal Cookies

I think this is the best oatmeal chocolate chip recipe. I followed in exactly (cut in half) and had some great cookies!! I set the timer and did exactly as the recipe called for, nice moist cookie, but held together.

Ham Vegetable Strata

Cut the recipe in half, used sourdough wheat bread, and added red bell pepper to veggie mix. Quite a bit of prep, but you do it all the night before so works great for a well prepared brunch event.

Quick Sesame Green Beans

Really enjoyed this simple recipe. Tasted great with a bar-b-cued tri-tip (beef). Quick, just make sauce before hand...do the beans at last minute when serving your meal.

Grandma's Chicken Noodle Soup

Per previous reviews, I sauted vegetables, and added carrot as well. Boiled some of the rotisserie chicken breifly with broth, and added can of cream of chicken soup for thickening. With no salt added, this was still salty. Next time will purchase low sodium broth. Just added the uncooked noodles at the end. Still enjoyed the soup, and will make again.
