Just your basic weekend cook. Work full-time, occassionally work-out and commute an hour, so mid week cooking is pretty simple, and does not ever involved a recipe. But I am usually inspired to actually reference a recipe on the weekend, and cook!
My favorite things to cook
Definitely casseroles with a salad... this lets my husband and I have leftovers mid week. Also love to prepare an occassional desert just to give him a treat.
My favorite family cooking traditions
Our favorite dinner usually starts with guacomole and chips, and ends with tacos or enchiladas. If all else fails, just throw something on the barbecue!

Chicken Noodle Casserole I
I thought this recipe was really good, and easy to make. Cut ingredients in half, and actually added saute mushrooms, garlic, green peppers, and green onions. At last minute also threw in some artichoke hearts as I stirred in the chicken and noodles. Turned out great, and filled a 9 x 9 casserole dish.

Chicken Enchiladas II
Still like corn tortillas for the flavor, but this is very simple and easy. Not bad for flour tortillas. Used white onions, added some Mexican chicken seasoning, and some black olives. This is definitely a recipe you can "play" with.

Shrimp Scampi V
Like others, this is really simple and very tasty. I did cut this recipe in half and added a pinch of flour, and some parmesean. Quick dish to cook, so have the rest of your meal ready!
