Brunch Enchiladas
I have made this several times and we are always delighted with the outcome! Great blend of flavors. We find it best served with salsa and sour cream.

Hot or Cold Vegetable Frittata
This is an excellent recipe! I only used half of the cream cheese and that was perfect...any more and it might have been too overwhelming - at least for my family. Overall, the flavors blend well. A great way to use some veggies from our garden.

Chicken Fettuccini Alfredo
Absolutely scrumptious! I followed the recipe as written - except that I left out the tomato. I couldn't believe how easy this was to make and how incredible it smelled while cooking. I served it over spinach fettuccini noodles and topped it with some steamed, chopped broccoli - it looked nice, added a few more vitamins, and tasted great together. We are a family of 5 and cut this recipe in half and still had a good amount of leftovers.
