Chocolate Chip Pumpkin Cookies
I halved this recipe and the only change I made was to up the spices and choc chips a tad. I didn't use nuts. They are very airy and moist inside but with a slightly harder exterior. Maybe they will be better cold the next day, but they just don't taste like much! No spice, not very sweet -I thought these were going to be like the cake-like pumpkin cookies I've had in the past, but guess I got the wrong recipe...

Chili Beef Casserole
I tried this with some of the alterations from the other reviews, and it was amazing! I also like things spicy so I substituted Rotel tomatoes (mild but will try original next time) and black beans, used taco seasoning on the beef, left out the peas, and used wheat tortillas instead of corn cuz I didn't have any. My husband and I loved it and will definitely make again!

Chocolate Chip Coffee Cookies
This was a pretty yummy cookie. I took some of the other's advice and increased the amount of coffee/liquor. I actually used 2TBLS strong coffee and 2TBLS Kahlua(didn't have coffee liqour). I also used semi-sweet choc chips, and it was fine, but would use milk choc. chips next time. The subtle coffee and cinnamon flavors were a nice twist on the traditional choc. chip cookie!
